A 30-seater space located in the Schleussig quarter, KUULTIVO will be relaxed and intimate, evoking a cozy family living room. Fashioned from 2 words from different languages - Kultur (German for ‘culture’) and Coltivo (Italian for ‘cultivate, grow’), this foodspace will be the culinary version of a ‘mash-up’ where ideas, flavours, personalities and passions collide.
The cooking will be Italian and pasta-centric, with specific influences plucked from Alessandro’s culinary encounters while globe-trotting with Cook It Raw for the past 20 years. The dishes will blend these specific flavours with the very traditional food he ate growing up in Italy in the 1980s, when his mother cooked 3-course meals for the family each day. The menu will rotate regularly, with special plates introduced each month to showcase exceptional products and ingredients that have been hand-picked by Alessandro. He will regularly invite his favourite producers and chefs from around the globe to come and cook for locals, introducing new perspectives, creating networks and access to knowledge sharing.
On any given day there could be an olive oil sampling, a bread-making tutorial or workshops on urban gardening or food waste solutions. Guest chefs might teach a class on how to prepare dishes using only seasonal, locally-sourced ingredients. While the main activity of the space will be foodservice, side-events, meetings and classes will be harmoniously folded in, while diners convene to enjoy a meal. Guests can sample delicious plates while learning how diet and local food systems can make significant impact in fighting climate change. Ideas will be passed from table to table, along with freshly baked bread. KUULTIVO will engage Leipzig’s local food scene in a multi-dimensional way, creating a communal identity forged through exposure to local and international culinary influences, imprinting the character of Leipzig in indelible ways.
